Healthy Oatmeal Chocolate Chip Cookies

I love oatmeal chocolate chip cookies!  This is my not-so-secret recipe for making these tasty treats healthier for you!  By using coconut flour instead of white flour, and yogurt and sugar-free applesauce instead of butter, you get more bang for your buck!

What you need:

1/2 c plain fat free yogurt
1 c unsweetened applesauce
1/4 c coconut butter
1/4 c cane sugar or honey
1/4 c dates (the mushy ones, not the dried pieces)
2 egg whites + 1 whole egg
2 tsp vanilla extract
1 c coconut flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 c oats
1 c mini dark chocolate chips

What you do:

  1. Preheat the oven to 325 degrees F.
  2. In a large bowl, mix together the coconut butter, dates, applesauce, yogurt, and cane sugar until smooth. Beat in egg + egg whites and then stir in vanilla.
  3. In a different bowl, combine coconut flour, baking soda, baking powder, and salt. Stir into the liquid mixture until just blended. Lastly, mix in the oats and chocolate chips. Spoon onto baking sheets sprayed or lightly greased with olive oil.
  4. Bake for 12-15 minutes or until golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a cooling rack.
  5. Enjoy!
