Pumpkin Cheesecake


I love cheesecake but I don’t love it for 600-1000 calories loaded with fat and sugar!!  Yesterday I was craving something a little richer than just a plain old protein shake so I created this delicious recipe~! It’s low in carbs, high in fibre and protein, and big on creamy cheescake awesomeness!  Hope you enjoy!

Ingredients:

  • 1/3 cup canned pumpkin
  • 3/4 cup unsweetened almond milk
  • 2 Tbsp ground flaxseed meal
  • 1 scoop vanilla protein
  • dash of cinnamon
  • 2 triangles of low fat Laughing Cow cheese

Directions:

  1. Blend all ingredients together in a blender
  2. Pour into a small dish or a glass
  3. Chill in the fridge for an hour or so
  4. Enjoy~!
